These juices are prepared from fruit grown without the use of ‘chemicals’ and not derived from genetically modified crops. All manufacturers are independently certified before they are able to use the term organic.

The method used to extract the juice from the fruit, depends on the type of fruit:
- Citrus, apples, pears and grapes are naturally juicy which enables them to be mechanically pressed and then filtered;
- Melon and papaya are steamed in order to release the juice;
- Fruit like Mango, guava, pineapple and strawberry must be pulped to extract the juice. When fruit is pulped, it is either pushed through a perforated metal plate that crushes it to a pulp or it is pulped in a liquidizer. The pulp is then filtered to remove the bigger fruit pieces.

The juice extracted from the fruit in the process of making fruit juice, is naturally cloudy but it can be clarified by filtering the juice. The extracted juice or pulp is filtered by means of dedicated filters. In some cases enzymes are used to clarify and stabilize the juice. Fruit juice like apple, pear and grape juice is generally clarified because of consumer preference. Clarified apple and grape juice is also used extensively as a base for making juices with other pulpy fruit ingredients like mango or guava.

Juice from fruit like apples, grapes and oranges is extracted and subsequently concentrated (water is removed by means of evaporation) to reduce the volume and to prolong the shelf life of the product. For ready-to-drink consumption, the concentrate is diluted again before bottling. This "add back" of water is called reconstitution.

If you boil a fruit juice the water in that juice comes out in the steam from your pot. You would be left with a (less watery) thicker stronger tasting juice. Unfortunately, the heat from that process would destroy some of the good parts of that juice and the aroma in the steam would be part of the flavor of that juice being lost to the atmosphere.
Companies that concentrate juices use vacuum processes to remove water from juices and they also can capture the aromas from that water. The captured aromas or essences can be added back to the "less watery" or "concentrated juice". These vacuum processes use less heat and so preserve better the integrity of the juices.

Sweeteners have many names; sugar, cane sugar, sucrose, high fructose corn syrup, dehydrated sugar cane sap, which are only some of many. Most shelf juices contain almost no natural goodness of the fruit they try to imitate. We do not use any sweeteners in any of our juices at all.
Thickeners like starches, pectins, or xanthum or guar gums are relatively cheap and replace the mouth feel of more fruit without the fruit. We use lots of real fruit in our juices so we never need to make them seem thicker artificially.

Crops grown organically are those that are not genetically modified and are grown without chemical fertilizers, pesticides, or fungicides. It can also mean that those crops are produced in an ecologically friendly way which does not harm the soil, atmosphere or water table.
Certified organic products are not only grown in the above fashion but every step of their production, transportation and storage is documented and these stages and their compliance to established standards is verified by a government authorized certifying body. Periodic audits of the growers, processors, storage facilities, carriers and packers who hold organic certificates ensure their integrity.

AL-Shams Juice does not use any preservatives. All of our juices are pasteurized and packed in glass jars. The usage of glass, a recyclable package that does not leach any plastics, dyes or other chemicals into the juice and the environment is in our experience an excellent choice for preserving juice without compromising its taste in any way.

Our juices do not contain preservatives. For the best freshness and quality, we recommend using the juice within 10 days after opening and storing in the refrigerator.

We do not add any sugar to our 100% Juices. The grams of sugar shown on the label come from fructose and glucose naturally occurring in the fruit juices used to make the product. All ingredients are listed in the ingredients statement on the product label.
